cHoCoLaTe praline bars - recipe

I have been experimenting on the crew with some tasty, healthy snacks for when our guests arrive.



I made chocolate praline bars, the crew were the guinea pigs and the  feedback  was great! 



If you are looking for something chocolaty yet healthy try this recipe out:

Base:
  • 1/2 cup quick oats (55g)
  • 1/4 cup medjool dates, packed (80 g pitted)
  • 1 tablespoon coconut oil
  • 1 tablespoon cocoa powder
  • 1/4 tsp salt
Hazelnut Praline Filling: 
  •  3/4 cup hazelnuts
  • 3/4 cup almonds 
  • 1 tablespoon coconut oil
  • 1/3 cup medjool dates, packed (105 g pitted)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Chocolate Topping:
  • 1 bar of semi-sweet chocolate (3.5 oz / 100 g), chopped
  • 2 tablespoons coconut oil
-Preheat oven to 350°F. Put hazelnuts & almonds on a baking tray and roast for 10-12 minutes, until golden brown.
Transfer hazelnuts   to a clean dish towel, folding up the sides to wrap and steam the nuts as they cool. Meanwhile, prepare a 9x5” (23x13 cm) loaf pan with parchment paper on all sides.

base:
place  oats in food processor and process into flour. Add medjool dates and pulse until a coarse meal. Then add coconut oil, cocoa powder and salt. Pulse until well mixed. Add mixture to a loaf pan, press firmly against back of a spoon and smooth mixture all around the loaf pan. Once thats finished its ready to be placed in the freezer .  Then get onto the filling . 

filling :
-Rub the hazelnuts over a dish towel to remove skins . Transfer  hazelnuts & almonds cup to cleaned food processor, add dates ,vanilla extract , salt . process mixture until its into a paste. 
remove loaf pan from freezer and rub the praline filling of the base evenly. Place it then in the fridge and get onto the chocolate filling . 

chocolate filling:
- add the chopped chocolate over a  double boiler (or heat-proof bowl set over a saucepan), with coconut oil . Wish together until smooth and chocolate is all melted . Add the chocolate mixture over the praline filling  and refrigerate 2-3 hours until the chocolate filling has set. 

Once done cut it into desired size bars and perfect for a snack!

                      This is how mine came out. It didn't last long! 
   

   

 So, that came out as a winner!
