What is the Bahamian cuisine?
Growing up on our sailing yacht I always had an interest to try out the different cuisines where ever we have visited. Thats where the chef side of me kicked in.
Whether it was trying trying the curries in Sri Lanka . I love spicy food, but I never had hot curries anywhere else before as in Sri Lanka . The curries there are either hot to hotter...no in between . I remember having curries there and have to continuously ask the waitress for a jug of water ....haha
The Bahamian cuisine has a South American influence. Seafood is the staple diet of Bahamas. The ocean mollusc (conch) is a firm ,white ,peached -fringed meat and is very poplar seafood meal you can either have it fresh or uncooked. A knife is used to score the conch meat , and lime juice and spices can be sprinkled over it.
'Cracked conch' is when it is deep fried , steamed and can be added to soups, salads and stews, or made into a conch seafood chowder. Something you must definitely try is the conch fritters.
I organised with a supplier to deliver Bahamian 'rock lobster' while at Marsh Harbour for a charter here in the Abacos . I made lemon garlic prawns and came out really delicious . It can be served either boiled, minced or added in salads.
Ray Russel (+12424753340) supplies rock lobster and stone crab which is another delicacy , but you will sure be able to find it anywhere .
I have a very sweet tooth ... and wherever I go I try out the local cuisine and DESSERTS . I can never say no to desserts. It is very hard to do, as I feel like I always need to jump o the scale afterwards ..hahah
The Bahamians enjoy variety of desserts such as coconut and pineapple tarts , duff desserts (it's a Bahamian dessert made with fruit in a dough).
I had organised to get conch from a local supplier and made a conch ceviche . The conch meat is very tough , rubbery , so do make sure the conch is marinated long enough in lemon juice. It was my first time to prepare conch . It is definitely a very authentic dish to make. Especially it being a local Bahamian dish!

If you are in the Abacos and wondering where to dine . One place I would recommend as I have gone there twice ...and both times have not been disappointed.
that is actually the restaurants name believe it or not...I had the pork sliders both times ...absolutely delicious .
